So it's like this. Every Tuesday, my husband is off playing figure games with his male friends in their gaming lair. And since I love to bake, I came up with the idea that every Tuesday I would bake a new cake or cookie for them just for fun. As this has now become a tradition, I have decided to post my creations here on this blog to share with you and also tell you what the men said about the different cakes. That way you can get an idea of ​​how the cake tastes and maybe try to bake one yourself.

Swedish Sticky Chocolate Cake with honey

Hi, and welcome to another Tuesday-cake!!
This cake has no English name, but in Swedish it's called "kladdkaka". And this particular chocolate cake is made with honey and no sugar.

It's a very simple recipe and the ingredients are

3 eggs
1½-2 dl honey
110 g butter
5-6 tablespoons of cocoa
1-2 teaspoon of vanilla sugar
1½-2 dl flour

Set the oven for 200 C.
Mix it all together one by one and you'll get a very dark and sweet mixture.
Take a baking tin and brush it with butter and breadcrumbs (ströbröd).
Then in the oven for about 12 minutes.
The cake will be a bit sticky in the middle, but that's how it's supposed to be.
Now let it set for a few minutes and then just enjoy.
If you think the cake needs something more, you can just add some berries, custard or whipped cream.

And now for the men's opinion, (and they had custard with there cake) they thought:

"The cake was awesome, sticky but didn't stick to the tin at all"
"Tasted like an normal Swedish chocolate cake, that was perfectly sticky in the middle"

Lemon meringue cake. Tuesday-cake is back on track!

So today's cake was a delicious lemon meringue cake and it was an easy cake to make and a fun one. 
Now, the guys have tasted the cake and they all loved it.

They thought it was:
 "a perfect cake to eat when playing games". 
"It doesn't crumb and it's easy to eat".
"A really juicy and delicious cake "

Yet another good report from the guys!!

I would definitely say this cake is a good and easy cake to do over and over again. 
But to make it different from time to time you can have berries or something else that you like 
beside the cake.

Lemon meringue cake. Tuesday-cake is back on track!

So, last week I had some vacation time and therefore there was no baking last Tuesday. I was off and enjoying life with friends and did not have time to bake. But today I'm back and the men will get to taste yet another Bella-cake.

Today's cake is called "lemon meringue cake".

It's a cake so full of lemon taste that it almost turns a bit sour in your mouth just like a piece of lemon would.
But it also has the meringue taste which is very sweet. So the two different flavors together form a super delicious cake, well this is at least what I hope the guys will think. Since this is all about them and there opinions. 

So in a few hours I will have some answers about what the thought about the cake and get back to you.

In the mean time hers the recipe:

Ingredients: 
250g butter 
3 dl sugar 
2 lemons 
3 egg yolks (save whites for the meringue) 
3 eggs 
2 teaspoons baking powder 
4 dl flour 

Meringue: 
3 egg whites 
1.5 cups granulated sugar

(For this you'll need a baking dish that's about 32x25 cm  )


1. Measure the butter and sugar in a bowl.

2. Prepare the oven dish and line it with baking paper (You don't have to have baking paper if you don't want to).

3. Squeeze the lemon juice from two lemons.

4 Pour the egg whites in a bowl and pour the egg yolks in another bowl.

5 Whisk the egg whites and sugar (for the meringue) to a solid foam. The bowl should be able to be turned upside down without the batter flowing out.

6 Whisk the butter and sugar that you measured in the first step to a smooth batter with an electric whisk (beaters need not be cleaned). Add the egg yolks and whole eggs, lemon juice and baking soda. Whisk quickly.

7 Add the flour and whisk quickly into a smooth batter.

8 Pour the batter onto the baking paper in the oven dish.

9 Pour the meringue batter on top.

10 Bake the cake in the bottom of the oven at 175 ° C for about 30 minutes. The meringue will get a nice golden color on top.  (25-35minutes, depending on the size of the baking dish)

11 Let the lemon meringue cake cool down with a baking towel on top. The meringue will collapses a little when the cake is done.

12 Then cut it with a sharp knife into squares and serve it (if you want) with berries, custard or vanilla cream.
It's also good just the way it it!! Enjoy!

Soft gingerbread cake with glaze

Here comes the recipe for my yummy gingerbread cake :-)
Start with setting the oven to 200C
2 eggs 
3 dl sugar 
4.5 dl flour 
1.5 dl milk 
2 tsp ground cloves (mald nejlika in Swedish)
2 tsp cinnamon 
Stir together then add

2 tsp baking powder 
150g melted butter 
And stir together 

Grease a baking pan with butter and then bread crumbs (ströbröd in Swedish). 
Pour the batter into the baking pan and place it in the middle of the oven for about 40 minutes or until the cake is no longer sticky.

In the meantime (if you want it) make some glaze. But remember, the cake is just as good without it.

Glaze:
100 grams of natural cheese, for example. cream cheese (not light version)
1 dl icing sugar
1 tsp vanilla
30 grams of butter

Mix it all together in a bowl and put it in the fridge.
When the cake is done, take the glaze and but on the cake. If you want you can wait for the cake to cool down before you but it on so it wont melt. But I wanted the glaze to melt out a bit on the cake so I put it on when the cake was still hot.

Soft gingerbread cake with glaze

So it's Tuesday again and today I made a cake that's called "Mjuk pepparkaka" in Swedish. But the translation is something like "Soft gingerbread cake" or just soft gingerbread. Regardless the cake is super yummy and tastes amazing if I may say so myself. It's good anyday and anytime. And today I also put some glaze on it to make it more special.

"Awsome cake. I like it better with glaze on. It's hard to beat"
"Ohh, sweet-sour glaze! Yummy!"
"I love this cake. The glaze raised the cakes flavor. Nice"
"Mmmmmmm...glaze and cake. Yummy as hell"
and to finish the comments from the guys, "there was one guy who just smiled and eat three pieces of cake".

So I would definitely say that the cake was very well-liked.

Chocolate and caramel cheesecake

This cake has a lot of different steps that you have to go through. First it's 
Day 1: the oreo crust and the making of the cheesecake
Day 2: the making of the caramel,  the chocolate ganache and the roasted pecans.

For you to easily follow in the recipe, I've taken pictures off every step to make it easier and for you to know how it's supposed to look. Happy baking!!

So first the ingredient: 

Oreo cake bottom:
300 gram oreos
100 gram melted butter

Cheesecake:
600 gram cream cheese
1 burk sweetened condensed milk (about 397 gram)
½ dl sugar
4-5 tbsp freshly squeezed lemon juice
2 tsp vanilla extract
3 big eggs
100 gram dark chocolate (70%)

Caramel:
2 ½ dl heavy cream 
2 dl sugar 
30 grams butter, softened

Ganache
100 gram dark chocolate (70%)
1 dl heavy cream

Decoration:
Roasted pecans


To do:

Oreo bottom
1. First crush the oreos to fine crumbs and mix the crumbs with the melted butter. 
2. Then put the greaseproof paper in the bottom of a baking tin, 18-24 cm in diameter (If the baking tin is 18 cm in diameter, it should be at least 7 cm high). Press the dough into the bottom and up on the edges of the mold. Then let it set in the fridge.



    









Cheesecake
1. Preheat oven to 160 °c. 
2. Boil a pot of water for a water bath. 
3. Whip the cream cheese, condensed milk, sugar, lemon juice and vanilla extract slightly creamy. Add the eggs and whip for one more minute. Chop the chocolate and melt it in a water bath (or in the microwave). Let it cool and then mix it with about 1/3 of the cheesecake batter. Bring out the prepared baking pan from the refrigerator and pour in the chocolate batter first. Smooth the top if needed. Then pour over the rest of the cheesecake batter into the mold. 
4. Place the baking pan in a larger baking pan and pour hot water around. The water should go up to half of the baking pan. Bake for about 1 hour and 15 minutes, or until the cheesecake is still slightly jiggly but firm around the edges. Let it cool completely in the tin before covering the mold and letting it set in the fridge overnight.

 

 

 


Caramel: 
1. Heat the cream gently in a small saucepan. 
2. Place the sugar in the saucepan and heat it on medium heat. Do not stir! When the sugar begins to melt and turns brown at the edge, gently, with a spoon, push the sugar towards the middle until all the sugar has melted. Stir until all of the sugar turns golden brown, but be careful so it doesn't  burn! 
3. Add the cream to the pot slowly - but watch out, it will bubble A LOT! Stir gently, add the butter and stir some more. Let it cool for a few minutes and pour into a clean jar.





Roasted pecans 
1. Heat oven to 175 °
2. Spread the nuts in a baking dish and roast in the oven for about 10-15 minutes or until the nuts are golden brown. Let it cool down.

 Assembling the cake: 
1.Take the cheesecake out of the fridge. Place it on a cakeplate or on a pie tray. Remove the edges of the form (let the ground remain if you find it hard to take it off). 
2.Pour the caramel (as much as you want) over the cake and allow it to run down over the edges. Allow to set for a while in the fridge. Meanwhile, you can prepare the chocolate ganach.









Chocolate ganache: 
1. Chop the chocolate and place in a bowl. 
2. Heat the cream in a saucepan until it reaches boiling point 
3. Pour the cream over the chopped chocolate. Wait 30 seconds and then stir the mixture until it's smooth. Allow to cool.

Assembling the cake, cont. 
1. Take the cake out of the fridge 
2. Pour the chocolate ganache over the cake and allow it to flow over the edge. Work quickly so that the chocolate doesn't harden. Smooth the ganache with a spatula if necessary. 
3. And to finish the cake just decorate with some toasted pecans.


A lot of different stages in this cake, but it's worth it and I think you will love the cake! Just go for it and give it a try!!

So today (or yesterday) I started to bake a new cake. This Tuesday it was time for:

Chocolate and caramel cheesecake

So some off the comments from the guys were:
